I am highly recommending Slovakia ..
1- literally middle of Europe so you will be able to visit it also Vienna or Budapest
2 - so cheap comparing with other Europe countries
3- u r dealing directly with empassy
Problem is if you will be able to find embassy reservation before feast

Croatia. You won't need to schedule an appointment. You just have to pay the application fees in dollars, the prices are reasonable in September, the only issue you may find is the cost of the flight yet it's worth it.
Visa takes 14 working days through vfs.
